「Takakura-cho Coffee」 in Kanazawa and Toyama uses Hokuriku ingredients. This spring, 「Takakura-cho Coffee Kanazawa Sakurada」 is debuting a series of food and sweets that incorporate local specialties.
Food menu full of vegetables from Hokuriku
「Pasta with Japan’s best shiitake mushrooms and freshly harvested komatsuna greens – butter and soy sauce」 (1,100 yen) has been available since April 1. It uses thick-fleshed shiitake mushrooms grown without agricultural chemicals by「Notokko」, an agricultural corporation in Noto Town. These luxurious shiitake mushrooms, which have won the top prize at a national fair and are used in famous restaurants, are of good color, shape, and taste. Komatsuna is grown by 「Happy Farm」 in Toyama Prefecture using less pesticides.

Pancakes made with ricotta cheese are available at Takakura-cho Coffee during the Spring Cheese Fair (until June 8), and some are decorated with local ingredients. At the Kanazawa Sakurada branch, 「Strawberry Ricotta Pancakes (1,750 yen)」 are topped with 「Sumire no Hoppe」, large strawberries grown at「Honda Farm」in Komatsu City.
The 「Kaga Bocha Ricotta Pancake」 (1,500 yen) uses Kaga Bocha tea, which has been further roasted, in the cream. Toppings include Noto Dainagon azuki beans and gold leaf from「Sanada Seianin Kanazawa City. For an additional 100 yen, Kaga-bo iricha from「Kobayashi Shop」is included in the set. This set is available until April 25. Pancakes are available from 11:00 a.m.
