Speaking of Kanazawa’s B gourmet food, it’s tonbara at Uchuuken Shokudo.
It has become famous on TV, in magazines, and on social media, but it really is delicious.
It is sometimes called one of the three best sushi restaurants. The other two restaurants will be described later.
Old-fashioned teishoku-ya
A really common set menu restaurant on a back street by the side of APA Hotel. It’s good that it hasn’t changed even though it’s become famous.

The restaurant has a U-shaped counter and a few chair seats.
The counter seats are partitioned off one by one to prevent coronas.
The secret sauce is so delicious.
The pork is grilled on a griddle and dipped in sauce. It is really simple, but the sauce is so delicious that the meat disappears quickly. Adult men should try the 「Tonbara Set Meal W」, which has twice the amount of meat.
Incidentally, the secret sauce is a combination of three kinds of miso and more than 10 kinds of fruits and other ingredients.
The accompanying cabbage is also very tasty with the secret sauce. I want to eat it once a week.
I love it that much.
