Kanazawa is the only place in Japan that specializes in Georgian cuisine, which is rare in Japan, so I’ll try to introduce it to you.
What kind of Georgian food is there?
Georgian cuisine is characterized by its rich flavor and aroma due to the abundant use of cheese, herbs, fruits, and walnuts. In fact, there are quite a few dishes that suit the Japanese palate.
Let me introduce three unique dishes. All of them are available at 「Bistro Pazapa」, so be sure to give them a try!
National dish 「Hachapuri」
It’s a bread made with cheese, but there are many variations and many snacks. It is the national dish of Georgia. Ajarlihachapuri, topped with an egg, is a popular dish.
「Shkumerli」, a garlic-laden bird dish
A punchy chicken dish cooked thoroughly in a sauce of butter, olive oil, milk, salt and pepper, and lots of garlic. The sauce is usually eaten with bread. Oh, it’s absolutely delicious already, isn’t it?
Spicy dumpling-like 「hingkali」.
It is Georgia’s version of dumplings with ground meat wrapped in a flour skin. The dumplings are squeezed to make them look like a dumpling, and are eaten after absorbing the meat juices first. There is also a fried version.
「Bistro Pazapa」 restaurant information
Mr. Maeda, the manager of the restaurant, is a former official chef at the Japanese Embassy in Georgia. He opened 「Bistro Pazapa」 to serve as a bridge between Kanazawa and Georgia.
